Cheese Toast

Thick slices of Country Bread
Olive oil
1-2 tsp dry white wine
Slices of cheese (Gruyere, Brie, goat cheese, and/or cheddar)
thinly sliced onion
salt
freshly ground pepper

Heat oven to 400F. Set thick slices of bread in olive oiled pan (or baking dish) & sprinkle each one with 1 or 2 tbsp of dry white wine. Top them with thinly sliced cheese, covering the bread completely. Scatter onion on the cheese & sprinkle with salt & pepper. Bake the toasts until the bread is toasted & the cheese is browned & bubbly, 20-25 minutes. The onions may char, but this adds to the flavor. Serve them very hot.
