1 1/4 cups packed brown sugar
1/2 teaspoon ground cinnamon
1 pound sliced bacon
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a shallow bowl, mix brown sugar and cinnamon. Dip bacon slices in the brown sugar mixture to coat, and arrange in a single layer on a baking sheet.
3.Bake 8 minutes in the preheated oven, turning once, until dark golden brown. Allow to cool slightly before serving.

Lox, Tomato & Scallion
1 thick tomato slice
4 oz smoke salmon
1 oz fresh mozzarella
1/4 c slice scallion
1 tsp each olive oil & lemon juice
Top tomato slice with salmon, mozzarella & scallion. Drizzle with olive oil & lemon juice.

French Toast
4 - 3/4"slices of frozen pound cake, thawed
2 eggs
1/4 c. heavy cream
1/2 tsp almond extract
1/2 tsp vanilla extract
cinnamon to taste
Nutmeg optional
In medium bowl, whisk together eggs, cream, extracts & spices. Soak cake in mixture, making sure all sides and top are saturated. Let sit 5 minutes. Heat butter in large skillet & fry until golden brown, turning once. Dust with confectioner's sugar & top with fresh fruit or maple syrup.
