Sesame-Peanut Pasta

1/2 c. peanut butter
2 tbsp soy sauce
1 tbsp chopped fresh gingerroot
1 tbsp sesame oil
1 clove garlic, peeled & chopped
1/2 tsp salt
1/4 tsp black pepper
1 lime, zested & juiced
8 oz linguine, cooked
8 oz snow peas, thinly sliced
1 red pepper, seeded & thinly sliced
1 carrot, grated

In food processor, blend first 7 ingredients, 1 tbsp lime zest and 2 tbsp lime juice 2 minutes. Add 1 tbsp water. In bowl, combine pasta, snow peas, red peppers, and carrot. Top with dressing; toss to coat evenly. Spoon into pepper halves, if desired.

Serves 5
