Confetti Rice

2 cloves garlic, peeled & chopped
1 tbsp olive oil
1 zucchini, diced
1 yellow squash, diced
1 small red pepper, diced
1 pkg(8.8oz) quick-cook long grain & wild rice
4 scallions, chopped
1 lemon, zested

In skillet, cook garlic in oil 1 minute. Stir in next 3 ingredients; cook 4 minutes. Prepare rice according to package microwave directions; add to skillet. Remove from heat; stir in scallions and zest. Add salt & pepper to taste.

Serves 4
